Versatile Cookie Mix
4 cups unbleached flour
1 1/4 cups Fructose sugar
1 1/4 cups sucant or brown sugar packed
3 tsp. baking powder
1 1/2 tsp sea salt
1 1/2 cups shortening or non hydrogenated buttery spread
Mix flour, sugars, baking powder and salt. cut in sholrtening until mixfure resembles fine crumbs.
Place desired amounts in containers. Seal tightly, labeland refrigerate not longer than 10 weeks. 9 to 10 cups of cookie mix.
If using self rising flour omit baking powder and salt.
Banana Cookies
2 1.2 cups cookie mix
1/2 cup mashed banana (about 1 small)
1 tsp. vanilla
1 egg
1/2 cup chopped nuts
Heat oven to 375 degrees Mix all ingredients. Drop dough by rounded teaspoonsful about 2 inches apart onto ungreased cookie sheet. Bak until light brown 12 to 15 minutes. Immediately remove from cookie sheet. About 3 dozen.
Peanut Butter Cookies
2 cups cookie mix
1/2 cup crunchy peanut butter
1 egg
1 teaspoon vanilla
Heat oven to 375 degrees Mix all ingredients. Shawpe dough by teaspoonsful into balls.Place about 2 inches apart on ungreased cookie sheet;Faltten in crisscross pattern with fork dipped in flour. Bake until light brown10 to 12 minutes. Immediately remove from cookie sheet and cool. About 2 dozen.You can also use chocolate kises or wafers in the center of each for an added treat. Considering the present peanut butter contamination you could use cashew or almond butter or get peanut butter from whole foods made from fresh peanuts.
Spice Cookies
2 1/2 cups cookie mix
1 egg
1/2 teaspoon ground cinnamon
1/2 tesp lemon extract
1/2 cup raisins
1/2 cup chopped nuts
Heat oven to 375 degrees. Mix all ingredients. Drop dough by rounded teaspoonsful about 2 inches apart onto ungreased cookie sheet. Bake until light brown, 12-14 minutes. Immediately remove from cookie sheet. About 2 1;/2 dozen cookies
Sugar Cookies
1 1/2 cups 10x sugar
1 cup unhydrogenated buttery spread
1 egg
1 tsp vanilla extract
1/tsp almond extract
2 1/2 cups unbleached flour or whole wheat pastry flour
1 tsp baking soda
1 tsp cream of tartar
Granulated sugar or colored crystalized sugar
Mix powdered sugar , margarine, egg vanilla, and almond extract. Mix theflour, baking soda , and cream of tartar. Cover and refrigerate at least 2 hours. Heat oven to 375 degrees. Divide dough into halves. Roll each half 3/16 inch thick on a lightly floured board. Cut into shapes.
Sprinkle with granulated sugar and place on lightly greased cookie sheet.Bake until edges are light brown. 7 to 8 minutes. About 5 doz.cookies
For Valentines Day Use heart shapes and for something a little different cut round and use a small heart shaped cookie cutter as a stencil and put red sugar crystals inside the heart shaped cutter to have a red heart in the center.
Make it a family project and enjoy your children or grandchildren for an afternoon. You can have the dough made while their in school or have them help make the dough one afternoon after school andd bake the cookies the next . It all depends on how brave you are. Be brave chidren love doing projects like this they will even help clean up the mess afterwords. Just tell them your part of the clean up is the cutters for safety's sake. Enjoy
